Reine Dijon mustards have been in production in France since 1840 and the experience shows. They come in a huge variety of flavours that take the mustard concept beyond what you thought was possible. Basil, honey, tarragon, basil, garlic, lemon, walnuts, cassis, white wine, tomato and olives, Cognac, figs and even curry. You’ll be lucky to find all of them in the UK but it’s good to know they exist. The fact that these mustards are just the right strength, without burning out your sinuses, is what allows all the flavours to come out and beautifully complement the initial sharpness. Tips: different flavours will be better suited for different dishes. The Tarragon version is especially good for white meats, chicken or fish. Also great to add to white wine sauces.
